We like to eat what is in season, and right now, we are getting a lot of local apples. So why not have a healthy and portable way to eat apple pie!? These bars are great for breakfast, a snack, or a dessert. The apple sauce in the crumble eliminates the need for oil and emphasizes the apple flavor.

Makes 9 bars
2 1/2 cups rolled oats
1 ¼ cups almond flour
3/4 cup unsweetened applesauce
¼ cup coconut sugar
2 T flax meal
1 ½ tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
2 apples, diced into 1” pieces (no need to peel)
1T maple syrup or coconut sugar
1 tsp cinnamon
Pinch of salt
Juice of half a lemon
Preheat oven to 350˚
Place all of the crumble ingredients in a food processor. Pulse until well combined and sticking together. In a lined 8”x8” pan, place about 2/3 of the crumble. Push the crumble down until it forms a smooth flat layer. This will be the base for the bars. Reserve the other third for the topping.
Mix the apple filling ingredients in a bowl, then pour on top of the crumble base.
Sprinkle the remaining crumble all over the top of the bars. I pinch clumps of the crumble to get large pieces.
Bake for 30 minutes. Allow to cool for 15 minutes, then slice into nine squares. Serve warm or room temperature.
