Blueberry Muffin Overnight Oats

A breakfast that can be made the night before on those days where you know you won't have to make something. This is a good way to keep you from stopping somewhere and eating something unhealthy that will only weigh you down. You can make a few of them and have them to grab and go for several days.

This is quick to make too. I throw everything in a jar, give it a stir, and pop it in the fridge. Done.

Simple, filling, and really good.


Makes 1 serving. Can be doubled, tripled, etc. to make more.

  • 1/2 cup rolled oats

  • 3/4 - 1 cup non-dairy milk (depending on how creamy you want it)

  • 1/4 cup blueberries, plus more for topping

  • zest of half lemon

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract, optional

  • 1 tsp chia seeds

  • 1 tsp maple syrup

  • 1/2 tsp cinnamon


Combine all your ingredients in a dish with a lid or a jar. Give everything a good stir, cover, and leave in the fridge overnight. Take it out when you are ready to eat. This can be eaten warm or cold.

Add whatever toppings you'd like and enjoy.

I like to top mine with more blueberries and lemon zest. You could also add more cinnamon, granola, some banana, or other fruits.

Oats are a great source of fiber. So are chia seeds. Which will also get you those omega-3 fatty acids. You are also getting protein here as well. They will keep you full for quite a while. Berries are an incredible source of antioxidants and vitamins, so load em up! Add a variety of berries. You can also add on some more maple syrup, hemp seeds, pumpkin seeds, or more chia seeds. A few nuts couldn't hurt either.
