One of my fondest memories was making baked beans with my grandmother. If they weren’t her beans, then I wouldn’t eat them. Back then, they weren’t vegan, so I hope I do her justice with my vegan version.

Baked beans are just one of my favorite foods; well, beans in general are. Beans are full of fiber and protein and will fill you up for an extended period of time. They are an essential part of a plant-based diet. These baked beans are oil-free and gluten-free, and refined sugar-free.

Preheat oven to 350°

In an oven-safe pot, sauté onions for 10 minutes on medium-low heat. Use water or broth to prevent sticking, if needed. Add garlic and sauté for one more minute. Then add in everything but the beans. Give it a good stir until everything is combined, and then pour in the beans. Give it a good mix. Place on the lid and bake in the oven with the lid on for 40-50 minutes.

Since ovens vary, check on them after 40 minutes to be sure they aren’t drying out.
