
Do you think you can't eat delicious food at a cookout? Do you think if you don't eat meat that you don't have a reason to grill? Oh, yes you do!
These are fun and flavorful skewers that you can grill indoors or out. These skewers have such good flavor with marinated tofu, pineapple, peppers, and onions. Grilling them gives them that extra smoky flavor. Lay them on a bed of cilantro lime rice and dive in!

You could switch up the veggies on the skewers to whatever you like. Using tempeh instead of tofu might be a good alternative although I haven't tried this...yet.
Skewer Ingredients:
1 block extra-firm or super firm tofu, pressed and cut into cubes
pineapple, cubed
1 red bell pepper, cut into squares
1 green bell pepper, cut into squares
1 onion, cut into wedges
Marinade ingredients:
1/4 soy sauce
2T rice or apple cider vinegar
1T toasted sesame oil
1T miso paste
juice of 1 lime
1 thumb size piece of ginger, grated
1 clove garlic, grated or minced
Cilantro Lime Rice Ingredients:
1 cup brown rice
2 cups veggie broth
3T fresh cilantro, chopped
Zest of 1 lime
juice of half a lime (save the other half for later)
pinch of salt
black pepper, if desired
Instructions:
Press your tofu to make sure most of the liquid is out.
Combine all of your marinade ingredients in a container large enough to hold your tofu cubes in a single layer. Make sure marinade ingredients are well combined. Marinate your cubes of tofu in the marinade for at least an hour. Longer is better. The longer they sit the more flavorful they will be.
When you are ready to make your skewers add on your ingredients in whatever order you'd like ensuring each skewer has a couple pieces of tofu, a couple chunks of pineapple, a piece of each color pepper, and some onion. SAVE THE MARINADE. This will be brushed on when they are being grilled.
Start preparing your rice by cooking your rice according to package directions but using vegetable broth instead of water. This gives the rice more flavor. Don't add in your lime juice or cilantro until the rice is cooked. Once the rice is fully cooked stir both in with a pinch of salt.
Preheat your grill or grill pan. When your grill is hot lay out your skewers in a single layer. While they are grilling brush each skewer with any leftover marinate. Allow them to cook for a few minutes on each side, brushing each side with marinade before you flip. Let them grill until your vegetables get softer and a touch of char on them.
Plate them up and serve them with your cilantro lime rice.
A squeeze of some extra lime juice and more cilantro on top is always good.
And..umm..don't forget to take them off the skewers when eating ;)
