We all need a little spice in our life. If you have never had harissa paste, then this is a great way to try it. By roasting the cauliflower with the harissa paste brushed all over it, you get an incredible depth of flavor and heat. This is such a flavor-packed dish that will warm you from the inside out. The harissa cauliflower is laid on top of a bed of wild rice with onions, tomatoes, and spices. This is a plant-based dish that proves eating this way is anything but boring.
Makes 4 servings
1 large head cauliflower, sliced into 1” thick piece or florets
3 – 4 Tablespoons harissa paste
1 cup wild rice
2 cups vegetable broth
half of an onion, diced
3 cloves garlic, minced
1 tomato, chopped
1 tsp cumin
½ tsp coriander
sliced green onions, for topping
Preheat oven to 400°
In a pan, start to sauté your onions until they soften and begin to brown, about 5-8 minutes. Add the garlic and spices into the pan and cook for 1 more minute. Add in the tomatoes, rice, and vegetable broth. Bring to a boil. Once it is boiling, turn the heat down to a low simmer and cover. Cook on low for about 40 minutes or the length of time listed on the rice package.
While the rice is cooking, spread your cauliflower in a single layer on a baking sheet. Brush both sides of the cauliflower with the harissa paste.
Bake for 20-25 minutes, until cauliflower is lightly browned.
Scoop some rice out onto your places and lay some pieces of the harissa cauliflower on top.
Sprinkle with slices of green onions and serve.
You can use another rice if you prefer. Wild rice is an excellent option for getting in those good whole grains.
This would also pair well with some fresh greens on the side for a cool contrast and to get in those dark leafy greens for the day.
