Sweet Potato Tofu Burritos

These burritos are one of those meals you can eat for breakfast, lunch, or dinner. They have all the fuel you need with fiber, protein, and tons of nutrients from the veggies. You can make these ahead of time for a grab and go meal or freeze them for a later date. You’ll love the flavor from the peppers and salsa.

I find these are one of those things I never get sick of. They are also easy to adjust to what you have in your house. Change the type of pepper, potatoes, or beans, or add in some more veggies.

Sweet Potato Tofu Burritos


Makes 6 burritos

  • 1 16 oz block of firm tofu, drained and pressed

  • 1 large sweet potato, chopped into 1” pieces

  • 1 cup black beans

  • 1 cup salsa

  • 2 poblano peppers, diced small

  • 3 scallions, sliced

  • Dark leafy greens (spinach, kale, collard greens, etc.)

  • 2T nutritional yeast

  • 1 tsp salt

  • 1 tsp chili powder, divided

  • 1 tsp cumin, divided

  • ½ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp smoked paprika

  • Burrito wraps


Preheat oven to 400°

Press any water out of your tofu. I use this tofu press but wrapping the tofu in a kitchen towel with a heavy pan on top will work too.

Spread the diced sweet potatoes onto a baking sheet. Sprinkle the potatoes with ½ tsp of the chili powder, ½ tsp of the cumin, smoked paprika, garlic powder, and onion powder. Give them a toss, so they are evenly coated. Bake for 25-30 minutes.

While the potatoes are roasting, in a pan on medium heat, start sautéing your peppers. Let the peppers cook for a couple of minutes, then crumble in your tofu.

Sprinkle the tofu with the other ½ tsp of chili powder, other ½ tsp of cumin, salt, and nutritional yeast. Let the tofu mixture cook for 5-10 minutes. You want to cook most of the moisture out. At this point, add in the black beans and salsa. Once your potatoes are done, add them to your tofu mixture along with the scallions. Toss everything together.

Place some greens on top of your wrap. Place about a ½ cup of mixture on the greens and roll up your burrito.

You can add some avocado, more salsa, or vegan cheese.
