I often hear people are looking for smoothies that don't contain bananas. So, this one's for you! The passion fruit will fix your sweet tooth, and we hid a little veggies in there as well. If you can't find a yellow dragon fruit, just use whatever you have available. Sometimes frozen dragon fruit is all that is available. The same goes for the passion fruit. It is hard to find fresh passionfruit, so I always go for frozen but use whichever you can find.
Makes 1 large smoothie or 2 small smoothies
1 whole fresh yellow dragon fruit, peeled
¼ cup frozen passion fruit
½ cup non-dairy milk
¼ cup frozen cauliflower or zucchini (you won't taste it!)*
¼ cup frozen coconut
¼ cup frozen pineapple
1T maca or ashwagandha powder, optional
*You can also use some greens instead of cauliflower or zucchini. It will just change the color a bit. You can also add a tablespoon or two of chia seeds, flaxseed meal, or oats to bulk this up with some fiber.
Blend all your ingredients in a blender until smooth and creamy.
Pour into a glass and enjoy!
This will start your day out right or be a wonderful afternoon snack. Heck, you can even have it as a dessert!
